Recipe: Wonderful Tarragon Summer Salad & Riesling
Now, I'm not sure where I got this recipe originally, it's so simple I've never for had to go Googling for the recipe.
And I've been making it for years. It's a gorgeous summer salad of only five ingredients, but with an explosion of lovely fresh flavours.
- Grapes, sliced in half
- Shallots, cut up, then covered in...
- Red wine vinegar
- Tarragon
- Feta cheese
The longer you can leave the shallots in red wine vinegar, the better, it takes the sting out of them, and adds a wonderful tang.
As for those wonderful grapes. they add a lovely sweet fruitiness.
Feta, this one an Irish made one from Buffalo in West Cork, adds saltiness and some fat too.
Lastly, the tarragon adds a really herby, light aniseed flavour.
With all these wonderful flflavours going on, the best match I've found is a good, really dry, crisp, zesty Riesling, though a Sauvignon Blanc could be almost as good a match, if you have a Riesling-aversion.
