Pork can be a meat of many styles, moist and fatty, lean pork chops, or salty juicy hams. While pork is classified as "red meat", it's really white, though definitely not as lean as chicken or turkey. We opt for richer, more aromatic styles of white wine, and juicy, fruity reds reds. Riesling can be a great match, as can some rosés, while Italian reds like Nebbiolo can be an exquisite match.
